I'm looking for a good introductory course to working with young people (online or offline), preferably covering how to engage them in the first place and keep them engaged over time.
Interestingly I've not hear of anything with this exact focus. There are plenty of youth participation courses - but little that focusses on general engagement, recruitment that I've found...

Local Authorities would often have local accredited youth work training for sessional workers, but that may also be aimed at volunteers. FE colleges sometimes run something similar. A call to your local authority youth service will I'm sure have an idea about what is happening in your area.
I have been on outreach training and detached training through the local authority i am employed with in the past. Both of the courses covered a variety of techniques to engage with yp in the first instance.
